Richard's Zucchini Boats

  • 3 zucchini's, about 6-7" long
  • 1 ear of white corn
  • Pepper Jack Cheese, thinly sliced
  • Salt & Pepper to taste


Preheat oven to 350 degrees. Wash the zucchini, trim off the ends and then slice in half, lengthwise. Using a small sharp paring knife, and perhaps a small spoon, gouge out the inner seeded section of the zucchini. leaving about 1/4" of white meat at each end - to form a hollow boat shape. Shuck the ear of corn, wash, and then cut the corn off the cob. Place this loose corn into the hollowed out zucchini boats. Salt and pepper to taste. Cover the zucchini boats with a layer of Pepper Jack Cheese.

Place zucchini boats in a baking pan with shallow sides. Bake for approximately 15-20 minutes in a pre-heated oven, 350 degrees; or they can be slowly bar-b-qued. Yum!
