Randy's Spanish Rice

  • 1-1/2 cups long grain rice
  • 2 cups chicken broth
  • 3 cloves garlic, minced
  • 1/2 cup olive oil
  • 1-1/2 cups stewed tomatoes, mashed w/juice
  • 1/2 onion, finely chopped
  • 1/2 bell pepper, finely chopped
  • 1 small can diced jalapeno chiles
  • 1/4 cup diced green olives w/pimientos
  • salt & pepper to taste


Fry rice in oil until lightly brown. Add garlic & onion; sautee until vegetables are tender. Add the broth, tomatoes, spices and the remainder of the vegetables. Cover and let simmer approximately 20 minutes without stirring.

Amount: Serves 6-7
