- 1-1/2 cups long grain rice
- 2 cups chicken broth
- 3 cloves garlic, minced
- 1/2 cup olive oil
- 1-1/2 cups stewed tomatoes, mashed w/juice

- 1/2 onion, finely chopped
- 1/2 bell pepper, finely chopped
- 1 small can diced jalapeno chiles
- 1/4 cup diced green olives w/pimientos
- salt & pepper to taste

Fry rice in oil until lightly brown. Add garlic & onion; sautee until vegetables are tender. Add the broth, tomatoes, spices and the remainder of the vegetables. Cover and let simmer approximately 20 minutes without stirring.
Amount: Serves 6-7
