Potatoes Anna

NOTE:  Blender Needed
  • 6 raw potatoes, scrubbed, and cut up
  • 1-1/2 cubes of butter (approx.)
  • salt & pepper to taste


Put 2 cups potatoes and enough water to cover them, into a blender container. Cover. Grate or chop for a few seconds, turning the manual button off and on a couple of times. Pour into strainer and drain. Repeat with remaining potatoes. Dot the bottom of a heavy skillet with butter. Spoon in a layer of thoroughly drained potatoes and press firmly into pan. Sprinkle with salt and pepper, dot with more butter. Repeat layers (not more than three). Dot top very generously with butter. Cover and simmer 15 minutes over moderate heat. Remove cover and continue cooking until tender. When crisp and brown on bottom, turn potatoes only once, to brown and crisp the other side. Serves 2 (with Pete/Randy’s size appetite) or 4-6 people.
