Pete's Secret Spinach Salad

Salad:
  • 1 bunch spinach, cleaned
  • 2 cups mixed baby greens
  • 1 cup green beans, steamed & cooled
  • 5+ roma tomatoes, seeded & cut into strips
  • 2 hard boiled eggs, sliced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh chives, chopped
Dressing:
  • 1-2 cups mushrooms, sliced
  • 5 slices bacon, chopped
  • 3/4 cup olive oil
  • 1/2 onion, chopped
  • 2+ garlic cloves, chopped
  • 1/4 cup shallots, chopped
  • 1/4 cup red wine vinegar
  • 1/2 lemon, juice squeezed
  • pinch of salt and pepper


Dressing:
Fry bacon in olive oil, add onions & garlic and cook a little longer. Add a pinch of salt & mushrooms, cook slightly. Add shallots, lemon and red wine vinegar at the end. Taste should be strong.

Note: if you have too much vinegar, add a little sugar to cut it.

Ratio = olive oil (3 parts) to vinegar (1 part)

Salad:
Serve each individual plate with spinach & mixed greens; topped with green beans, tomatoe slices & eggs. Drizzle hot dressing over greens. Sprinkle lightly with fresh basil & chives.
