Scotia's Cold Rice Salad

  • 5 cups of chicken stock
  • 2 cups long grain white rice (uncooked)
  • 2 cups mayonaise
  • 3 (6 oz) jars marinated artichokes, chopped
  • 5 green onions, chopped w/tops
  • 1 oz. green pimento olives, chopped
  • 1 large green pepper, diced
  • 3 large celery stalks, diced
  • 1/4 cup fresh parsley
  • 1 tsp. curry powder


Boil stock, stir in rice, cook 20 minutes. Mix the artichoke oil in the jars with the 2 cups of mayonnaise. When the rice is cooked, mix all ingrediants together. Serve cold.

Serves 12-16 people.
