- 5 cups of chicken stock
- 2 cups long grain white rice (uncooked)
- 2 cups mayonaise
- 3 (6 oz) jars marinated artichokes, chopped
- 5 green onions, chopped w/tops

- 1 oz. green pimento olives, chopped
- 1 large green pepper, diced
- 3 large celery stalks, diced
- 1/4 cup fresh parsley
- 1 tsp. curry powder

Boil stock, stir in rice, cook 20 minutes. Mix the artichoke oil in the jars with the 2 cups of mayonnaise. When the rice is cooked, mix all ingrediants together. Serve cold.
Serves 12-16 people.
