- 1/2 cup oil or butter
- 3-4 cloves garlic, chopped
- 4 small onions, chopped
- 2 ripe tomatoes, chopped
- 1-2 bay leaves
- 1/2 tsp ground cinnamon
- 5-6 whole cloves

- 5 lb. chicken (diced) (or 2-3 lb beef, diced)
- 1-1/2 tbsp. salt
- 1 tsp black pepper
- 1 tsp cumin
- 1 tsp coriander
- 2 tbsp curry powder
- 1 tbsp paprika

Heat oil in pot, add garlic & onions, brown till onions are transparent. Add tomatoes, bay leaf, cinnamon & cloves. Cover & cook 5 minutes. Add meat & when water has steamed off, add remaining ingredients; stirring to prevent burning. Cover with water and cook until meat is tender. (3 hours for beef, 1 hour for chicken).
Serve with rice, chutney & bananas.
