Letty's Chicken & Noodles (Sotanghon Manok)

  • 1 stewing chicken, cut into pieces
  • 1 finger size section of Ginger [peeled/sliced]
  • 3 qts. water
  • 1 pkg. Mong bean threads
  • 2-3 chicken boullion cubes [or to taste]
  • salt & pepper to taste


Slowly simmer chicken pieces & ginger in large pot with the 3 quarts water. When chicken is very tender; cool, debone and return to the hot broth.

Soak the Mong bean thread noodles in warm water for 15-20 minutes before adding to the hot chicken broth. Before dropping into broth, you may want to break into shorter noodles. Stir noodles into hot simmering broth and cook for approximately 10 minutes; serve warm.

Note: These noodles will soak up most of broth after prepared, you may need to add a little more water & chicken boullion (to keep the rich chicken flavor).

You can eat these noodles by themselves or served over white rice.
