- 1 lb. turkey/chicken breast - boneless/skinless (cut in large pieces)
- 3 cloves garlic, minced
- 1/2 tsp. ground Cumin
- 1/4 tsp. ground red pepper
- 1/2 tsp. ground black pepper
- 2 tbsp. olive oil

- 1-1/2 cups fresh tomatoes, seeded & chopped
- 1/2 cup fresh Cilantro, chopped
- 1/4 cup grated parmesan cheese
- 2 tbsp. orange juice
- 12 oz. dry Linguine, cooked and kept warm
- Cholulu Hot Sauce

Cook linguine, and keep warm. Combine chicken, garlic, cumin, red pepper & black pepper in medium bowl; toss to coat. Heat oil in large skillet over medium-high heat. Add chicken mixture; cook 4-6 minutes or until chicken is no longer pink in center. Add tomatoes; cook 2 minutes. Stir in cilantro, cheese & orange juice; and toss with the warm linguine. Serve immediately.
Set out the Cholula Hot Sauce, so that individual servings can be spiced up to taste.
