Barbara's Carrot Cake

  • 2 cups flour
  • 2 tsp. baking soda
  • 2 tsp. baking powder
  • 2 tsp. cinnamon
  • 2 cups sugar
  • 1-1/2 cups oil
  • 4 eggs
  • 1 dash salt
  • 3 cups shredded carrots, packed
  • 1 cup chopped walnuts


Pre-heat oven to 350°. Mix first 8 ingredients and beat well. Blend in the carrots & nuts. Pour into a well-greased and floured 13 x 9” cake pan. Bake for 45 minutes. Cool and then ice with Cream Cheese Icing.

Temp: 350°
Bake Time: 45 min.
