- 4-5 large tomatoes, peeled, finely chopped
- 1 onion, finely chopped
- 1 bunch green onions, finely chopped
- 3 Jalapeno chiles, seeded, finely chopped
- 4 Serrano chiles, finely chopped
- 4 garlic cloves, finely chopped

- 2 limes - juice from
- 1 tbsp. vinegar, white
- 1 tbsp. olive oil
- 1/2 tsp. salt & pepper (or to taste)
- 1 bunch fresh cilantro leaves, chopped
- Two-three 5.5 oz. cans of tomato juice

Mix all the ingredients. Let stand for 2 hours at room temperature before serving. Serve with corn chips as an Appetizer; or as a garnish for Tacos, Burritos, etc.
Note:
For an easy way to peel tomatoes: Drop tomatoes into boiling water for approximately 50 seconds, and then immediately submerge into ice water. When you prick the skin lightly with the tip of a sharp knive, the peel will slide off the tomato easily.
