Maureen's Seven Layer Dip

  • Two 16 oz cans refried beans
  • 24 oz guacamole [Wholly Guacamole or Yucatan work well]
  • 1/2 red onion, diced
  • 4 oz can diced green chiles
  • 16 oz sour cream
  • 1 pkg McCormick taco seasoning
  • 1-1/2 cups cheddar cheese, finely grated [sharp or medium]
  • 1 or 2 Rome tomatoes, seeded and diced, skin on
  • 1 small can, black olives, sliced & drained


Spoon the refried beans evenly over the bottom of a 9 x 13" dish [or 3 quart dish] and smooth out. Spoon the quacamole over the beans. Sprinkle the chopped red onion and the diced green chili's over the guacamole layer. In a small bowl, mix the sour cream and taco seasoning together. Dollop the sour cream mixture over the quacamole layer, gently spreading. Sprinkle the cheese over the sour cream mixture. Top with the diced tomatoes and sliced olives. Cover and refrigerate until ready to use. Serve with tortilla chips.
